Here is a quick and easy recipe for coconut seed slice. A slice which is nut-free, grain-free, oil-free and egg free and requires NO BAKING! High in protein and fibre, these energy bars make for an energy boosting midday snack or a little treat at the end of your day.
100ml melted coconut oil
90g melted cacao butter (available at health food shops)
90g hulled tahini
80g honey or rice malt syrup
handful of currants (optional)
pinch of salt
1 - 2 teaspoons ground cinnamon
125g sunflower seeds
2 tablespoons chia seeds
2 tablespoons flaxseeds or flax meal
60g shredded or desiccated coconut
125g dark chocolate
Lightly grease base and side of rectangle baking tin with oil then line with baking paper.
Place banana, coconut oil, cacao butter, tahini, honey/rice malt syrup, salt and cinnamon in bowl of food processor and blend to a sooth consistency.
In a separate bowl add the seeds, currants and coconut. Pour in the banana mixture and mix well.
Spoon seed mixture into baking tin and smooth out using a spatula or spoon.
Refrigerate until set. Melt dark chocolate and spread on top and put back into refrigerator to set.
- Add nuts to the seed mix. This, of course, then is no longer nut free. I sometimes like to use brazil nuts and cashews.
- Omit the chocolate from the top layer. But remember, this is the best bit!!!
