These tasty little morsels are a great option if you are feeling like something sweet. Easy to make and easy to store with only a handful of ingredients! They simply taste like fudgy cookie dough truffles....and who doesn't want that?!
1 can chickpeas, rinsed and pat dry with paper towel
3 tablespoons of rice malt syrup
4 tablespoons nut butter of your choice (I used almond butter on this occasion)
2 teaspoons vanilla essence
1 teaspoon cinnamon
1/2 - 3/4 cup almond meal
Pinch of salt
Pinch of bicarb soda
200g dark chocolate
In a food processor combine chickpeas, rice malt syrup, nut butter, bicarb soda, vanilla, cinnamon and salt. Mix well.
Add the almond meal and stir in by hand.
This next step I like to use gloves as the mixture is quite sticky. Line a tray with baking paper. Roll into balls and place on the tray. Put in freezer for about an hour until they become quite solid.
Bring about an inch of water to a simmer in your saucepan. Place a bowl over a saucepan of simmering water. Set the heatproof bowl in the mouth of the pot, making sure the water doesn’t touch the bottom of the bowl and melt chocolate. Dip the truffles in the chocolate and place in fridge to set.
