Chickpea Crumble Tuesday, 25th July 2017



Admittedly this recipe was kind of an accident.  I rushed home from the Pilates studio to make some lunch and thought I would like a chickpea pattie as so as to introduce more legumes in to my diet.  

I purchased a tin of chickpeas and thought I will figure the rest out from my cupboard.  The patties turned into crumble because I dropped the tray and the patties turned into one big crumbly mess.  I had fun with this and this is a nice basic one.  You can make the crumble in advance and just add the salad / veggies and it is great to eat after your Pilates class.


INGREDIENTS

1 tin chickpeas, rinsed and drained

1/4 cup rolled oats

1/4 cup pepitas

Chill powder to taste

Salt to taste

Cumin to taste

Cayenne pepper to taste

Tomato

Avocado

Aioli 

Chia seeds


TO MAKE

Place chickpeas, rolled oats and pepitas in a food processor and pulse until combined. 

Add mixture to a bowl and stir in salt and spices.  Roll into balls then press flat onto lined oven tray.

Bake in oven at 160 degrees for 10 minutes then turn patties over for another 10 minutes.  

Disassemble with a fork (alternatively you can drop the tray on the floor like I did!).

In a bowl place the chickpea mixture with some chopped tomato, avocado and aioli.  I like Doodle's Creek Aioli.  Sprinkle some chia seeds on top and you are ready to eat!
