Spinach And Pea Soup

Soup is a great meal which you can particularly enjoy at this time of year.  It's quick, easy and great for when it's chilly outside. It is convenient and you can make it so it is chock full of vegetables!  Super easy to have when finishing an evening Pilates class :-)


INGREDIENTS

Grapeseed, olive or macadamia oil 

2 brown onions, peeled and chopped

4 garlic cloves, peeled and chopped

2 tablespoons ginger, peeled and chopped

3 cups peas

2 cups spinach

6 - 7 cups vegetable stock - bought or home made.  

Salt and pepper to taste

Fresh lemon juice


TO MAKE

Heat oil in large pot on medium - high heat. Add onion, garlic and ginger and sauté for 4 - 5 minutes. Add stock and peas. Cover and bring to boil.  Once boiling, bring temperature down to simmer for 3 minutes.

Add spinach and simmer for another 2 minutes.  Add salt and pepper to taste.

Puree until smooth and serve with a squeeze of fresh lemon.
