Starting the day right by eating a good breakfast helps to make continually good food choices for the rest of the day. Usually we are rushing around in the mornings and it is very easy to forget breakfast. This means we will be less alert, have lower concentration levels and it will be more challenging to function effectively throughout the day.
I made this recipe the other day with bits and pieces which were in my pantry. The more variety of toppings, the better :)
1/2 cup rolled oats
1 cup milk of your choice. I like almond milk
1/2 teaspoon cinnamon
1 teaspoon rice malt syrup
Pear, sliced thinly
Handful of pepitas, sunflower seeds, buckwheat kernels
1 teaspoon chia seeds
Place oats, milk, cinnamon and rice malt syrup in saucepan over medium heat. Cook for around 5 minutes until you are happy with oat consistency.
Place oats in bowl and top with fruit and seeds.
Eat and enjoy.
